Pesto Sauce (for pasta etc.)

This is by far one of the easiest recipes we make which kids seem and love. We made it for 5 different groups of kids over the school holidays and all of them ate it. Some had five bowls, some had one, but they all enjoyed it.

Ingredients:

1 cup of basil

2 cloves of garlic

2 tablespoons of olive oil (of course we use Santa Marta) 

1-2 cups of assorted veggies - we usually add cauliflower, broccoli, mushrooms and/or spinach. Depends what we have in the garden or what needs to be used up. The kids will be so busy enjoying it, they wont question what you have put in it.

Squeeze of lemon juice

Salt and pepper to taste

Spring onion (optional)

Handful of nuts (optional)

Packet of cooked pasta

Method:

  1. Blitz all ingredients in a food processor until smooth.
  2. Add a few tablespoons to cooked pasta with cheese. My son also loves it with tuna too. If there is leftover sauce, store in a jar in the fridge and use for other dishes too. Can also be frozen.
